Sokołów training cycle for the HoReCa industry
The Sokołów S.A. Group launches a cycle of meetings devoted to its offer dedicated to the HoReCa sector. The first one took place in Tarnów, with beef and venison as the main theme. The managers and directors of the Tarnów and Krakow restaurants had a unique opportunity to see the heart of the facility — the production. This is Sokołów’s first such initiative addressed to the HoReCa sector.
The first meeting with restaurant owners and managers took place in Tarnów, where Sokołów’s beef processing plant is located. For many of the guests it was a unique and only chance to visit a production plant.
The guests stressed that for them it was the first opportunity to witness production of meat that they serve their customers. They were amazed and delighted with how clean the production line is and with safety procedures.
The next stage of training featured a culinary show prepared by Dominik Moskalenko — Sokołów S.A. culinary advisor. Dominik took on some of the least popular products, such as beef tails, diaphragm, or cheeks, which taste was highlighted repeatedly. The second part of the show dealt with venison, i.e. products that have just hit the shelves of Sokołów S.A. Distribution Centres. These products were introduced after many consultations with chefs, who suggested what products are lacking in the wholesale offer. Thanks to this cooperation, starting form this month, there will be no problem purchasing Sokołów’s deer, boar, and doe products at the Sokołów S.A. Distribution Centres. Soon, the partridge, pheasant, or quail will be available too.
During the workshop, Dominik Moskalenko prepared excellent dishes, that the participants found very tasty: Braised beef cheeks on root vegetable purée; Hanger steak braised in tomato sauce with herbs, with pappardelle pasta and Parmesan; Beef tails rillette on quince purée.
The guests received certificates confirming their participation in the first beef training organised by Sokołów S.A. Such trainings will be organised also in other parts of Poland.
