Chefs Only and Sokołów in a special action dedicated to diabetic patients

On 26 October 2015 on the Bird Island in the Mikołajki Hotel, a one-of-a-kind Chefs Only industry event took place. It was a meeting of Chefs and Pastry Chefs constituting the World Chef Day résumé.

One of the highlights of the meeting were military manoeuvres, during which the Chefs divided into groups tried to control heavy military equipment. In addition, they underwent the first aid and sniper training, and they faced the challenge of crossing a rope bridge.

Another incredible attraction were culinary trainings prepared for children and youth from the House of the Great Heart of St. Faustyna in Giżycko. The time spent with chefs was for the young people a perfect opportunity to discuss and exchange experiences. Sokołów was also there, and this year, together with the Coalition Against Diabetes, it worked to promote the Menu for a Diabetic Patient community action among the restaurant business representatives. The chefs, as well as students and teachers from culinary schools, met with the Menu for a Diabetic Patient project organisers. It was a great opportunity to learn how to compose healthy meals for people with diabetes, what rules to follow, and how to calculate carbohydrate and carbohydrate-protein exchanges in food.

Cooks had a chance to learn about the project and find out how to implement a diabetic patient-friendly menu in their restaurants. Dominik Moskalenko, Sokołów’s culinary advisor has created a couple of dishes that accommodate the needs of such persons, including Bavette salad, beef carpaccio, chateaubriand sirloin with pumpkin purée and dried tomatoes. Dominik Moskalenko was accompanied throughout the day by dietitian Anna Karczewska.
